While Bottarga is a fully licensed restaurant with an extensive in-house wine list, we also understand the joy of sharing a cherished bottle of wine. Federico, the driving force behind our culinary creations, infuses joy into every dish with his exceptional talent. With a solid foundation from his graduation at William Angliss Institute in 2012, Federico honed his skills under the guidance of renowned chefs like Shannon Bennet. His decade-long dedication led him to collaborate with acclaimed Melbourne establishments, including Vue de Monde, Rosetta, Matteo's, Crown Casino, and Scopri.

As the founder of Bottarga, Federico now has complete creative control to bring his culinary vision to life. With a profound appreciation for simplicity and quality, he creates dishes that evoke a sense of nostalgia through taste alone. His expertise and unwavering passion ensure that every plate is a masterpiece, showcasing his exceptional culinary talent.

FRONT OF HOUSE:

Somi, our esteemed hospitality expert, possesses an innate talent and passion for providing exceptional service. Having been involved in running her family's successful restaurant and catering business from a young age, Somi acquired invaluable knowledge and skills. At just 23, she established her own upscale café, Kaizen Coffee Co, in Bangkok.

 

Since relocating to Melbourne, Somi has continued to expand her expertise in high-profile cafes and restaurants, enriching her already extensive knowledge through years of hands-on experience. With her wealth of experience, you can trust that you are in capable hands when dining at Bottarga.

Together, Federico and Somi form an extraordinary team that is dedicated to providing an exceptional dining experience.
