Our menu is an ever-evolving expression of who we are. Each dish is rooted in bold flavour, guided by curiosity, and shaped by the incredible produce of Australia’s finest growers, fishers, and artisans. With native and wild ingredients, housemade elements, and time-honoured techniques, every plate is designed to be shared, savoured, and remembered.

OUR STORY

After four years at our first home on Martin Street, Brighton - where Bottarga was built through hard work, learning, and the support of our community - we begin a new chapter on Bay Street. Founded on the values of a hard-working immigrant family, Bottarga has grown into a cornerstone of Brighton’s Bayside dining scene and one of its most awarded restaurants. This move is more than a change of address; it marks an evolution of our journey and a chance to refine what we love. Our cooking reflects our backgrounds, experiences, and a deep respect for produce, presented with intention and care.
